POPEYE WOULD BE PROUD//SPINACH SALAD

i eat alot of spinach and one of my favorite ways is in this salad.  it's super easy...sweet with a little savory, and can be eaten by itself or served on the side.

|what i used|
spinach
goat cheese (or feta)
dried cherries or cranberries
thinly sliced granny smith apple
pecans (i like these candied*)
your favorite vinaigrette
(i love a balsamic or champagne vinaigrette with this)

|how i used it|
no measuring required, just toss up as much as you like!

*for an added treat...try candied pecans.  in a saucepan, melt down some brown sugar (with a little water) and sprinkle in some salt, cayenne pepper, and cinnamon. remove from heat and fold in your pecans. once coated, spread them out on a piece of wax paper to cool. you can store these in an airtight container.
